The story behind it
I made these lil fellers when my kids came home and they were a big hit. I had an idea & concocted them thinking I'd really done somethin. (Ha) Well after writing down a rough draft recipe to my son I decided to hunt in my old cream cheese cookbook to see if there was a better way to make the crusts and guess what someone came up with mini pecan pies long before me. (laugh) I found a recipe very similar to mine. It may even be better than mine but hey here is the recipe I thought was my very own idea. (laugh) God sure knows how to keep me humble. I'm gonna be makin these for Thanksgiving instead of a big ole pecan pie. Why? Well becuz they are Mamma Slappin Good!
