Ingredients

Directions

  1. Get you a big ole head o cauliflower and cut off the stalk and cut head into pieces.
  2. Put flowers in a soup pot and add a sliced up carrot or two iffen ya have them (they are just ta make it all pretty like anyhow). Cover with water just over flowers a tad.
  3. Boil a while just till almost tender. Ain't got a clue as ta how long.
  4. Drain, reserving 2 cups o water from the pot. Place flowers in a bowl.
  5. Throw soup pot back on stove and slip a whole stick of butter in there. Melt this and add 1/4 C. flour. Stir to make the two friendly.
  6. Now grab that there saved water and pour a whole cup of heavy cream in it. Pour this into the pot while stirring. Keep er hot!
  7. Now add 3 oz. cream cheese (you can leave this out iffen ya ain't got none or add Velveeta) & 4 slices white American cheese (not that fake stuff that comes in little wrappers and reads cheese food!). Stir till all cheeses melt.
  8. Dump in the cauliflower. Bring back to simmerin.
  9. Now for seasonin hmmm well it depends on how ya feel that day but this is somethin to think about: 2 tsp. or more of dried parsley or iffen ya have some good fresh stuff 2 TBLS. (I sometimes use more cuz I like the stuff); 1 or say 1 1/2 tsp. salt (I use 1 1/2 cuz I'm addicted); 1/4 tsp. white pepper (you can use black but white makes er stay all pretty). You can add some dried chives if it suits your fancy. (I only do this when I'm in the mood for them and when my kids ain't home.)
  10. Ok whewwwww now let this mess cook a bit to soften the flowers and allow everything to get friendly.
  11. Spoon some into bowls.
  12. Tip: Iffen you really want to put a very RICH hurtin on yourself, well place some real tiny pieces of Velveeta on top of each steamin bowl. My kids love it! They stir to make Velveeta melt while the soup cools some.
  13. Tip: You can put Velveeta in the pot instead of the cream cheese but hey you will be spoilin all the fun.
  14. Tip: Now dare I say this is good enough to make ya wanna slap your.... umm awe never mind it's a southern thang!

The story behind it
