Ingredients
- Pastry for 2 crust 9 inch pie
- 1 c sugar
- 2 Tb. tapioca
- 1/2 tsp. cinnamon
- A dash of salt
- 6 c thinly pared tart apples
- 2 Tb. butter
Directions
- Heat oven 350.
- Stir together sugar, cinn, tapioca, salt.
- Mix with sliced apples; pour into pastry lined pie pan.
- Dot with butter; cover with top crust and cut slits.
- Seal and flute edges. Cover edges with 2 to 3 inch foil to prevent excess browning.
- Bake 45-50 min or until crust is nice brown and juice begins to bubble through the slits in top crust.
- Tip: Old trick - instead of foil use old sheets or pillowcase, tear into strips 2 inch wide and long enough to go around pie, wet with cold water and squeeze out. Lay around the edge. Remove right away after baking and toss away.
